Crock Pot Chicken & Barley Soup

Have you ever had barley? Recently a friend gave me a bag of pearled barley. I had never tried it before and probably never would have, had it not been in my pantry. When we finally decided to try it, we fell in love. It has a rice consistency, but is slightly chewier. Delicious and healthy, barley is now a staple in my pantry!

It’s perfect soup weather here in Arkansas, so I decided to test my culinary ingenuity with Crock pot Chicken & Barley Soup!

Crock Pot Chicken & Barley Soup

5 Celery Ribs, sliced

4-5 Medium Carrots, sliced

Half an Onion, chopped (Optional)

3 Chicken Breast, thawed and chopped

1 Cup Pearled Barley

6 Cups Chicken Broth (I use water and 3 Caldo de Pollo bullion cubes)

1 Cup Heavy Whipping Cream

Seasonings of your taste – I used Dill, Parsley, Rosemary, Salt, Pepper, Garlic powder, and Onion powder.

Combine all ingredients in crock pot, and cook on high for 4-5 hours or until chicken and barley are cooked thoroughly.

This is very versatile soup! I used whatever I had on hand and it filled our bellies with warm, delicious flavor!
